Ingredients (serves 4–6)

500 g beef (chuck/ribs), cut into cubes

150 g smoked meat (smoked bacon/kaiser), diced

1 large onion

1 carrot

1 parsnip
-
½ small celeriac (or celery root)

1 bell pepper

200 g chopped tomatoes (or tomato passata)

2 tbsp oil
-
1–1.2 l hot water
-
Salt & pepper, to taste

1–2 bay leaves

200 ml borscht (fermented wheat bran) or lemon juice, to taste

Fresh lovage or parsley (optional)
Method – Thermomix

Chop the vegetables
Add onion, carrot, parsnip, celeriac, bell pepper → 5 sec / speed 5. -
Sauté
Add oil → 5 min / 120°C / speed 1. -
Add beef & smoked meat
Add beef, smoked meat, bay leaves, salt, pepper →
5 min / 120°C / speed 1 / reverse. -
Cook the soup
Add hot water → 45 min / 100°C / speed 1 / reverse. -
Tomatoes & souring
Add tomatoes → 10 min / 100°C / speed 1 / reverse.
Add hot borscht (or lemon juice) → 5 min / 100°C / speed 1 / reverse. -
Finish
Adjust seasoning, add chopped lovage or parsley. Rest 5 minutes before serving.

Shape

Second rise

Bake
Preheat oven to 220°C (fan 200°C)
Score the top with a sharp knife

Transfer to a serving dish and smooth the surface.
Red onion sauce

Cook onions
Place oil and sliced red onions into mixing bowl.
Cook 10 min / 120°C / reverse / speed spoon. -
Finish sauce
Add tomato paste, paprika, salt and sugar (optional).
Cook 3 min / 100°C / reverse / speed spoon.

Add water, stock paste, chicken, salt and pepper.

Remove chicken, shred it, then return to bowl.
Add noodles.

until noodles are tender.
