Romanian Beef Sour Soup with Smoked Meat – Thermomix Version ๐Ÿฒ

A classic Romanian comfort soup: tangy, hearty, and full of vegetables, with extra depth from smoked meat – made easy in the Thermomix.

Ingredients (serves 4–6)

  • 500 g beef (chuck/ribs), cut into cubes

  • 150 g smoked meat (smoked bacon/kaiser), diced

  • 1 large onion

  • 1 carrot

  • 1 parsnip

  • ½ small celeriac (or celery root)

  • 1 bell pepper

  • 200 g chopped tomatoes (or tomato passata)

  • 2 tbsp oil

  • 1–1.2 l hot water

  • Salt & pepper, to taste

  • 1–2 bay leaves

  • 200 ml borscht (fermented wheat bran) or lemon juice, to taste

  • Fresh lovage or parsley (optional)


Method – Thermomix

  1. Chop the vegetables
    Add onion, carrot, parsnip, celeriac, bell pepper → 5 sec / speed 5.

  2. Sauté
    Add oil → 5 min / 120°C / speed 1.

  3. Add beef & smoked meat
    Add beef, smoked meat, bay leaves, salt, pepper →
    5 min / 120°C / speed 1 / reverse.

  4. Cook the soup
    Add hot water → 45 min / 100°C / speed 1 / reverse.

  5. Tomatoes & souring
    Add tomatoes → 10 min / 100°C / speed 1 / reverse.
    Add hot borscht (or lemon juice) → 5 min / 100°C / speed 1 / reverse.

  6. Finish
    Adjust seasoning, add chopped lovage or parsley. Rest 5 minutes before serving.

  • For extra-tender beef, extend cooking by 10–15 minutes.

  • 220 g water

  • 10 g fresh yeast (or 5 g dried yeast)

  • 1 tsp sugar

  • 400 g strong white bread flour

  • 1 tsp salt

  • 10 g olive oil (optional but traditional)

  1. Activate yeast
    Add water, yeast and sugar to the bowl

    Add flour, salt and olive oil

  3. First rise
    Transfer dough to a lightly floured bowl

  4. Shape
    Knock back the dough gently
    Shape into a round or oval loaf

  5. Second rise
    Cover and rest 20–30 minutes

  6. Bake
    Preheat oven to 220°C (fan 200°C)
    Score the top with a sharp knife
    Optional: place a small ovenproof dish with water in the oven for steam

  • 2 × 400 g cans white beans (butter beans or cannellini), drained & rinsed

  • 3–4 cloves garlic

  • 60–80 g sunflower oil (traditional) or olive oil

  • 100–150 g hot water

  • 1 tsp salt, or to taste

Red onion sauce

  • 2 large red onions, thinly sliced

  • 30 g sunflower oil

  • 1 tbsp tomato paste

  • 1 tsp sweet paprika

  • ½ tsp salt

  • Optional: pinch of sugar

  1. Blend beans
    Place beans, garlic, oil, water and salt into mixing bowl.
    Blend 30 sec / speed 5.
    Scrape down sides of mixing bowl.

  2. Creamy texture
    Blend 20–30 sec / speed 6–7, until smooth and creamy.
    Transfer to a serving dish and smooth the surface.


Red onion sauce

  1. Cook onions
    Place oil and sliced red onions into mixing bowl.
    Cook 10 min / 120°C / reverse / speed spoon.

  2. Finish sauce
    Add tomato paste, paprika, salt and sugar (optional).
    Cook 3 min / 100°C / reverse / speed spoon.

  • 1 parsley root or parsnip, sliced

  • 1 heaped tbsp chicken stock paste (or salt to taste)

  • 400 g chicken thighs or breast, whole or large pieces

  • 80–100 g egg noodles.

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • Fresh parsley, finely chopped (to serve)

Remove chicken, shred it, then return to bowl.
